
This easy summer dessert recipe can be made in less than 20 minutes and is the perfect way to celebrate fresh peach season.
INGREDIENTS:
- fresh peaches, halved and pitted
- avocado oil
- vanilla ice cream
- bourbon caramel sauce
DIRECTIONS:
Set grill to medium-high heat.
Brush the cut sides of the peaches with oil. Place the peaches cut-side-down on the grill and cook for 3-4 minutes, or until they are lightly charred.
Transfer peaches to serving bowls, cut-side-up. Top with ice cream and drizzle with caramel sauce and enjoy!
BOURBON CARAMEL SAUCE
This Bourbon Caramel Sauce tastes irresistibly delicious drizzled on everything from ice cream to fruit, brownies, coffee and more!
INGREDIENTS:
- 1 cup granulated (white) sugar
- ¼ cup water
- ½ cup heavy whipping cream, at room temperature
- ¼ cup butter, at room temperature
- 1 tsp vanilla extract
- 2 tbsp bourbon
- 1 tsp fine sea salt
DIRECTIONS:
Combine the sugar and water in a heavy-bottomed sauce pan. Briefly stir to combine.
Turn the burner on to medium-high heat. DO NOT touch or stir the pan until the sugar has caramelized.
The sugar mixture will go from being completely clear, to a champagne colour, to a light golden colour, and then to increasingly darker shades of amber. (Keep a close eye on the sugar, as it darkens quickly once it begins to caramelize) Once the sugar reaches a deep amber colour (like the colour of a penny), remove the saucepan from the heat and turn the burner off.
Immediately begin to slowly pour the heavy cream into the sugar mixture, whisking as you pour to quickly incorporate the cream. (The mixture will bubble furiously when the cream hits the hot sugar, so be very careful!) Add in the butter and whisk until combined. Add in the vanilla, bourbon and sea salt, and whisk until combined.
Let the sauce cool. Put a scoop of vanilla ice cream in the centre of each peach half, then pour the bourbon caramel sauce over it and serve.
