Cucumber and Salmon Canapes

INGREDIENTS:

Cream Cheese Filling:

  • 4oz cream cheese
  • 2 tbsp sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic, finely chopped
  • 2 tsp parsley, finely chopped
  • salt & pepper to taste

Cucumber Bites:

  • 3 mini cucumbers
  • 1 English cucumber sliced
  • 6oz smoked salmon, cut into small slices
  • parsley

DIRECTIONS:

For the cream cheese filling:

Combine all ingredients in a bowl:

4oz cream cheese, 2 tablespoons sour cream, 1 tablespoon lemon juice, 1 clove of garlic, 2 teaspoons of finely chopped parsley, salt & pepper to taste.

Mix everything using a spoon or a spatula, and set aside.

Assemble:

To make Cucumber Salmon Canapes, wash cucumbers then using a potato peeler peel 3 mini cucumbers, creating super thin long strips, set aside.

Place a spoon of cream cheese filling over an English cucumber slice, then add smoked salmon on top. Repeat for all of the cucumber slices.

Take a mini cucumber strip and fold it to create a Christmas tree and poke it onto a toothpick. Use a toothpick with a star on one end for a more festive look.

Arrange canapes on a serving tray and enjoy!
