Maple Glazed, Bacon Wrapped Dates
- 3 pcs Medjool Dates, pitted
- 1 cup Watermelon (diced)
- 3 slices Bacon
- ¼ cup Feta Cheese, crumbled
- 2 fl ozs Maple Syrup
- 1 cup Balsamic Vinegar
- 2 tbsp Brown Sugar
- ½ cup Sugar
Preheat oven to 400 degrees Fahrenheit. Cook bacon on a tray with parchment paper until 3/4 of the way done, remove and set aside. Mix together the Maple Syrup and Brown Sugar, brush onto the bacon.
Mix the Balsamic and Sugar in a saucepan, bring to a simmer over medium high heat, reduce heat to medium and let simmer until mixture reduces and the bubbles become thick. Remove from heat and let cool.
Mix the Watermelon and Feta in a bowl, season with salt and pepper.
Wrap the dates with the bacon strips and hold them together with toothpicks, return them to the oven for 2 minutes.
Plate the dates on top of the Watermelon and Feta Salad and drizzle with the Balsamic Reduction.
