Vanilla Cake


  • 1 ½ cups unsalted butter, softened
  • 2 ¼ cups granulated sugar
  • ½ cup liquid egg whites
  • 1 ½ cups buttermilk
  • 2 ¼ tsp baking powder
  • 3 cups all-purpose flour
  • 1 tsp vanilla
  • ½ tsp each baking soda and salt


Preheat oven to 350°F. Grease and flour three 8-inch round cake pans; line bottoms with parchment paper. Set aside. In stand mixer with paddle attachment, beat butter with sugar until fluffy. Beat in egg whites and vanilla. In separate bowl, whisk together flour, baking powder, baking soda and salt. Beat into butter mixture, alternating with buttermilk, making 3 additions of flour mixture and 2 of buttermilk. Scrape into prepared pans, smoothing tops. Bake until cake tester inserted in centres comes out clean, 30-35 minutes. Cool in pans for 10 minutes. Invert onto greased racks; peel off parchment paper. Let cool completely.


  • 1 pkg cream cheese
  • ½ cup salted butter
  • 2-3 cups icing sugar
  • 1 tsp vanilla
  • shredded coconut for decoration (snow for the top of the cake)


Beat the cream cheese until smooth and light textured. Add in the butter and beat until it’s completely combined with the cream cheese. Add in the first 2 cups of icing sugar and beat until smooth. Add in ¼ cup at a time, testing it until you have reached the perfect sweetness for your taste. Once the icing tastes perfect to you, beat in the vanilla.
