- 1 head cauliflower
- 1 tbsp olive oil
- 1 tbsp butter
- 2 garlic cloves
- 1/4 cup Parmesan cheese, grated
- 2 tbsp light sour cream
- 1/2 tsp salt, or to taste
- 1/8 tsp pepper, or to taste
Rinse and cut the cauliflower. In a large pot with a steamer basket add enough water until it touches the bottom of steamer basket. Add the cauliflower, cover and bring the pot to a boil. Cook for 10 minutes, or until the cauliflower is fork tender.
In a small pan over medium heat add the olive oil, butter, and garlic cloves. Sauté the garlic for 2 minutes, or until the garlic is tender.
Add the cooked cauliflower, sautéed garlic, Parmesan cheese, sour cream, and the salt and pepper to a large food processor.
Taste and season with a little more salt and pepper if desired. Run the food processor again, scraping down the sides every so often and running it until the cauliflower is smooth and creamy (about 2-3 minutes).
