BERRY NAPOLEON with GRAHAM CRACKER WAFERS and STRAWBERRY CREAM

INGREDIENTS:

  • 1 packet phyllo pastry
  • 1 cup graham cracker crumbs
  • 1 cup sugar
  • ½ lb melted butter
  • 1 cup strawberry cream
  • 1 cup sliced fresh strawberries
  • fresh mint for garnish

DIRECTIONS:

To prepare wafers, open packet of phyllo pastry and cover sheets with a damp towel.

Place one sheet of phyllo on cutting board and using a pastry brush lightly cover with melted butter.

Lightly sprinkle sugar and graham cracker crumbs then add another sheet of pastry and again brush with butter and sprinkle graham and sugar.

Add the final layer of phyllo pastry and brush with butter.

Using a sharp knife cut phyllo sheets into desired shape (most commonly triangle rectangle or square works best).

Transfer cut shapes to a baking sheet with parchment paper and bake in a pre heated oven at 350 until they are golden brown (about 3 to 5 minutes).

To assemble, place one phyllo shape onto serving plate cover with a layer of strawberry cream and sliced strawberries repeat this step until you have three layers of pastry.

Garnish with whipped cream, berries and mint.
