Seared Scallops with Bacon Jam & Sweet Potato Pûré

  • fresh Scallops
  • ½ pound of bacon
  • ½ cup of white wine
  • 1 teaspoon of balsamic vinegar
  • olive oil
  • 4 cloves of garlic
  • 1 large sweet potato
  • 2 red onions
  • 1 red bell pepper
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • chopped parsley and chives
  • salt & pepper


Bacon Jam:

Dice bacon strips. Finely dice red onions and red pepper and garlic. Cook bacon over medium heat until it starts to brown. Add onions until they caramelize. Add chopped parsley and garlic. When garlic is cooked, add the white wine and reduce the mixture over low heat until the wine is cooked off. Add chives, red pepper and balsamic vinegar, cook over low heat for 5 minutes.

Sweet Potato Pûré:

Finely dice one red onion. Mince 2 cloves of garlic. Peel and dice sweet potato into 1 inch cubes. Heat a pot with oil. Add red onions and cook until caramelized. Add sweet potatoes and garlic. When garlic is cooked a third of the way add heavy cream. Bring the mixture to a boil, then simmer until the sweet potatoes are soft. Blend mixture with butter until smooth. Add salt and pepper to taste.


Heat oil in a frying pan. Sear scallops with butter, and then cook over medium heat until golden brown. Add salt and pepper to taste.

Finally, assemble all 3 components onto a plate and enjoy!
